This Muskoka Pumpkin Smoothie is a good and delicious option for boosted support as we transition into fall. This drink is best served as you sit outside/hike in the beautiful fall colours. Be mindful of physical distancing because people will try to get close to sample this smoothie!
Why? It’s delicious and nutrient dense!

Potassium, Vitamin C and iron all have the ability to boost our mood, and the beta carotene supports conversion into vitamin A, which helps with vision, organ integrity and immunity.

There are also bananas for heart health and energy, almond milk with calcium and enriched Vitamin D. Add in oats which are gluten free and support many things that are good for health, including lower blood sugar levels. And chia seeds are a whole powerhouse of nutrition and benefits all their own, including high fibre, protein, anti-oxidants and the punch of being lower in calories and higher in nutrition.

Honestly, this smoothie should be wearing a cape! It delivers a nutritional punch!

 ½ cup Water
 ¼ cup Rolled Oats
 ¾ cup Puréed pumpkin
 1 tbsp Pumkin spice
 ½ cup Almond butter (or any other nut butter)
 10 ½ tsp Chia seeds
 1 Banana
 ½ cup Unsweetened almond milk (or any alternate milk)
 2 ¾ tsp Maple Syrup

Add the water and oats to a saucepan over medium-low heat. Bring to a simmer and cook for four minutes. Add the pumpkin and pumpkin pie spice and stir. This will smell amazing. You may feel the uncontrollable urge to go rake leaves.

Add the pumpkin and oat mixture to a blender, along with the remaining ingredients. Blend carefully, allowing space for the heat to escape, until smooth and creamy. Serve warm and enjoy!

This recipe serves two people, it’s also yummy if you heat it and add a dash of turmeric and serve it over egg noodles or rice noodles.
